Can weight loss be negatively affected by a low-calorie diet?

I try to eat between 1100-1300 calories a day (I’m 5’1″), but I’m not always able to eat all of it on busy weekdays. I do however, usually manage to eat an appropriate amount of protein and carbs. For example, today I’ve eaten 700 calories (47 g protein, 112 g carbs, 11 g fat).

Should I be able to maintain muscle and lose fat despite my low-calorie intake?
